
A Frittata is an Italian omelet. My grandmother made them with mint, for some un-godly reason.

By now, if you you're following my recipes, you will know, I cook to-taste, which means in terms of meal-cooking I don't use exact measurements. I know that's annoying -- I apologize (half-heartedly) <giggle>
[With my baking, I promise, I use exact measurements with my ingredients. After all, I am NOT a cave-woman!

Ingredients:
6 eggs, mixed
1 chopped onion
1/4 cup grated pecorino-romano cheese
green beans
salt & pepper
1 Tbs butter & olive oil
In a large skillet, saute chopped onion in equal parts of butter and oil (this prevents the butter from burning). Before adding the mixed eggs, add the cheese, and stir into the pan, so it covers the onions. DO NOT MIX OR STIR IN THE PAN. Reduce the heat of the flame.
Add the green beans (enough to cover the surface of the pan) to the egg mixture, and slowly, lift by sections, the egg mixture, so the liquid can seep to the bottom and cook. Watch this carefully so it does not burn, rotating the pan and egg mixture, without mixing the bottom onions. You are not folding this, you are keeping it round and flat. The goal is to have a bite of green beans and onions in each bite. <YUM!>
When the bottom seems to be cooked fully, place the pan in the broiler, so the top of the egg-mixture can finish cooking.
BE SURE YOU DO NOT SET YOURSELF, OR YOUR PAN, OR OVEN MIT ON FIRE!!!
Careful attention must be paid to this simple egg-dish... but boy, is it worth it!
Served with a glass of wine, a nice tossed-salad, and good Italian bread with cheeses and smoked meat....
