
Kerry you may be suprised but I can cook.....
I little Pasta Dish
1 Onion....2 or 3 cloves of Garlic..... A blob of Butter...thinly sliced chopped Prociuto
2 Diced chicken Breasts...a heap of chopped up mushrooms.....one really ripe tomato peeled and chopped..a dollop of tomato paste...
1 Cup of white wine...1or 2 glasses of white wine to drink while preparing this to some nice music...
250 ml of cream...salt and pepper.....Pasta (Penne) and Romano cheese
take the onion and a couple of cloves of garlic...chop up and start frying gently in butter on a large frying pan.
Add the chopped Procuito until it kind of browns about 2 mins...add the diced chicken breast and do same..about 3 mins
drop in the chopped mushrooms and fry for about 2 mins....add tomato paste and chopped tomato and stir in wine....
now simmer this until it reduces by half.....stir in the cream...add salt and cracked pepper and bring to boil....reduce heat and let the sauce thicken...
stick your finger in the sauce periodically to taste it and guzzle down your wine.......
serve this on some Peneloni pasta which you would have obviously had on the boil......and don't forget to sprinkle some shaved Romano cheese on top.
